The fish: This hybrid sturgeon is a cross between Beluga and Sterlet. It was developed over several decades in the Soviet Union as an early response to dwindling wild stock of Beluga. The very small production in these early years was reserved for very senior government officials and Communist Party dignitaries. This fish reaches maturity in about 7 - 8 years, whereas purebred Beluga requires 10 - 12. Furthermore, breeding the fish with Sterlet’s small mouth prevents it from eating other sturgeon in aquaculture.
The caviar:
Visually Bester recreates the look of pure Beluga; eggs about 3.0mm with classic gray coloration. However, Bester has its own distinct and complex flavor, bold and savory with umami all over the place. It has been described as ‘LSD for your tongue’, as the morphing of flavors and extensive long finish is a true gastronomic journey.

The fish: Osetra is one of the classic caviar sturgeon. Native to the Black and Caspian Seas, this 8 - 12 ft fish spends most of its life at sea, traveling upriver only for spawning. These majestic fish are costly and difficult to aquaculture. Time to harvest is typically 8 - 10 years, and they need a lot more food and space than freshwater species.
The caviar:
Considered by many to be the finest of all caviars. The eggs are 2.5 - 3.0mm in size,with a broad palate of natural colors including black, gray, green, brown, and gold. The flavor is complex, with a buttery foundation giving way to a briny, oceanic finish. This caviar is best featured on its own.

The fish: Like Osetra, Sevruga is known as one of the classic caviar sturgeon from the wild harvest era. It has a similar growth rate and anadromous life - cycle to Osetra, but does not grow as large. It is somewhat rare in modern aquaculture due to the long growth time and its unique nutritional needs.
The caviar: Sevruga eggs are small, like Sterlet’s, however, they tend to have a more uniform black color. The flavor is very intense, and tends to polarize. People who like Sevruga really like Sevruga. As of late, it has become recognized as the true aficionado’s caviar.

The fish: As its name implies, this fish is most common in the Arctic flowing rivers of Northern Russia. Like Sterlet, it is primarily a freshwater species, but prefers deeper, colder water. Siberian is a popular species in aquaculture because it produces big (>2.5mm) eggs in about five years.
The caviar: Siberian eggs are typically large enough to visually pass for more expensive products, however, the color palate is limited to black-gray. The fish: Sterlet is the smallest sturgeon species, growing to about four feet long. In the wild, it lives its entire life in the rivers of the Black and Caspian Sea Basins, it does not migrate into saltwater. It is one of the easiest and most economical species to aquaculture, producing caviar in about five years. Prior to Russian access to the Caspian Sea, “Caviar” meant a product from Sterlet Sturgeon.
The caviar: Sterlet eggs are small, under 2.0mm in diameter. The taste is earthy and neutral, with no bitter or sour notes. Sterlet is popular as a fine dining ingredient, due to its versatile flavor and affordability. For these reasons, it is also popular with those new to caviar. Sterlet caviar is a quality product at a price associated with non - sturgeon substitutes.

The fish: This is the same fish as regular Sterlet, but bred with albinism. In nature, this rare genetic defect produces fish with poor survival rates. However, under the care of extremely skilled aquaculturists, this fish can be raised to produce a naturally golden caviar.
The caviar: The caviar is the same as regular Sterlet, except for the spectacular golden color produced by the fish’s own genetics. Almas is the Russian word for diamond, and Almas Caviar is held in very high esteem, Almas Sterlet is priced as high as $650 per ounce thru some internet sellers. A unique treat for special event s, with Sterlet’s crowd-pleasing taste.

The fish: Brook Trout are Char Salmon native to Eastern North America. Most production of these beautiful fish is for stream stocking for put and take fisheries and ecological enhancement. Therefore, very little is produced for commercial food sources. We are fortunate enough to get a limited number of eggs to cure each autumn.
The caviar: While technically a “roe”, Chikura is reminiscent of Pacific Salmon Roe (“Ikura”), but is less oily and has a pronounced tender pop. It is light and refreshing, and lends well to topping for sushi and tartar creations. It also serves well in traditional Caviar service.
